Oven-Baked Pork Chops with Savory Black-Eyed Peas

Cooking Sequence

  • Prepare pork chops and begin to bake (10 minutes)
  • Prepare peas and serve (20 minutes)

Oven-Baked Pork Chops


Cooking spray
1 large egg (or 1/4 cup egg substitute)
1 box seasoned coating for pork (5–6 oz)
1 1/2 lb center-cut pork loin chops
1/8 teaspoon pepper


  1. Preheat oven to 425°F. Coat baking sheet with spray. Place egg in shallow bowl and pork coating in second shallow bowl.
  2. Sprinkle both sides of pork chops with pepper. Dip pork chops in egg (coating both sides) and allow excess to drip off, then coat both sides with pork coating, pressing with fingers to coat evenly. Arrange pork chops on baking sheet (wash hands).
  3. Bake 20 minutes or until golden and internal temperature reaches 145°F; serve.

Savory Black-Eyed Peas


2 (15.8-oz) cans black-eyed peas (undrained)
1 tablespoon cooked bacon pieces
1/8 teaspoon pepper


  1. Combine all ingredients in medium saucepan.
  2. Heat on medium 15 minutes, stirring occasionally, or until thoroughly heated; serve. (Makes 6 servings.)

Aprons Advice

  • Complete your meal with boil-in-bag rice, seasoned cooked greens, tomato wedges, cornbread, and apple pie for dessert.
  • If preparing rice, begin cooking after black-eyed peas are started. Combine both with a shot of hot pepper sauce for a quick version of “Hoppin’ John.”
