Creamy Onion Pork With Beans and Pico de Gallo

Cooking Sequence

-- Prepare pork and begin to cook - 15 minutes

-- Slow cook pork - up to 3 1/2 hours

-- Prepare bean recipe and complete pork; serve - 5 minutes

Creamy Onion Pork


1 large sweet onion, sliced

1 large green bell pepper, sliced

1 boneless Boston butt pork roast (2-3 lb)

1/2 teaspoon kosher salt

1/4 teaspoon pepper

1 tablespoon olive oil

1 (10.75-oz) can condensed cream of onion soup

1 cup white wine (or chicken broth)

2 tablespoons chicken herb seasoning

1/4 cup fresh mint leaves, finely chopped


-- Slice onion and bell pepper.


1. Preheat large sauté pan on medium-high 2-3 minutes. Season pork with salt and pepper (wash hands). Place oil in pan, then add pork; cook 3-4 minutes on each side or until well browned. Transfer to slow cooker.

2. Whisk soup, wine, and seasoning until blended; stir in onions and peppers. Pour mixture over pork.

3. Slow cook on HIGH 3-3 1/2 hours or until pork is fall-apart tender. Chop mint; stir into pork. Serve.

Beans and Pico de Gallo


1 small jalapeño pepper, finely chopped

1/4 cup fresh cilantro, coarsely chopped

2 cans pink beans (15-16 oz), rinsed and drained

1 1/2 cups fresh salsa (pico de gallo)

1/2 teaspoon kosher salt

1/4 teaspoon ground cumin

juice of 1 lime


-- Chop jalapeño (remove seeds, optional) and cilantro.


1. Combine all ingredients (except lime juice) until blended.

2. Squeeze juice of lime (1 tablespoon) over bean mixture. Stir and serve.

-- The fresh salsa we are using is also known as "pico de gallo." It is an uncooked condiment made from tomatoes, onions, peppers, and cilantro.
