Tomato-Avocado Bowls

Tomato-Avocado Bowls

2 medium Hass avocados, halved
2 tablespoons fresh cilantro, coarsely chopped
2 medium tomatoes, coarsely chopped
1 (11-oz) can mexi-corn, drained
3 tablespoons spicy ranch dressing, divided
Crispy tortilla strips (optional)


  1. Cut avocados in half; discard seed. Scoop out some of the avocado, leaving about 1/2 inch to form a bowl; chop the scooped out avocado. Chop cilantro (leaves only) and tomatoes; place in medium bowl.
  2. Stir avocado pieces and drained corn into tomatoes until blended. Spoon tomato mixture into each avocado half; drizzle with dressing. Top with tortilla strips, if desired. Serve.
