Steamed Spicy Pork & Black Bean Dumplings

1/2 cup angel hair coleslaw, chopped
1 (1/2-inch) piece fresh ginger root, peeled and minced
1 egg, separated for white only
1/4 cup Bush's Best Black Beans, drained and rinsed
1 cup ground pork
2 tablespoons presliced green onions
1 teaspoon chunky garlic paste
1 tablespoon soy sauce
2 teaspoons sesame oil
2 teaspoons Texas Pete Original Hot Sauce
20 wonton skins (from Produce)
1/2 cup sweet chili sauce

  1. Chop slaw. Peel ginger, then mince (1 teaspoon). Separate egg, reserving the white and discarding the yolk. Drain and rinse beans.
  2. Combine in a large bowl: pork, cabbage, green onions, ginger, garlic paste, soy sauce, sesame oil, hot sauce, and egg white; mix thoroughly. Fold in black beans, stirring carefully so the beans don't break into pieces.
  3. Bring water to a boil in large stockpot for dumplings. Arrange wonton skins on a flat work surface. Spoon 1 tablespoon pork mixture into the center of each skin, then fold the sides of the skin toward the middle over the filling to form a dumpling.
  4. Place dumplings into steamer baskets, then lower the baskets into boiling water. Cover pot and steam dumplings 6–7 minutes and until pork filling is 165°F. Serve dumplings with sweet chili sauce.
