Peach and Scallop Skewers

Peach and Scallop Skewers

1 lb sea scallops
1 large firm peach, peeled, pitted, and cut into 1-inch chunks
1 large red bell pepper, cut into 1-inch chunks
1 large red onion, cut into 1-inch chunks
12 (12-inch) bamboo skewers
2 tablespoons blackening seasoning
Cooking spray


  1. Preheat grill (or grill pan) on medium-high. Thread scallops, peaches, peppers, and onions onto skewers, alternating items. Sprinkle with seasoning, then coat with spray.
  2. Grill skewers 2–3 minutes on each side until grill-marked and scallops are opaque and firm.

Other Preparation Methods

  • Sauté: Preheat large sauté pan on medium. Season 1 lb sea scallops with 1 teaspoon lemon pepper seasoning. Melt 5 tablespoons garlic/herb butter in pan; add scallops. Cook 4–5 minutes, turning occasionally, until firm and opaque. Serve over pasta with shredded Parmesan cheese.
  • Broil: Preheat oven to broil. Season 1 lb sea scallops with barbecue seasoning and 1 tablespoon olive oil. Place in single layer on baking sheet; broil 4–6 minutes until opaque and firm.
