Total Time:
5 minutes


1 1/2 oz light rum
1/2 oz fresh lime juice
1/2 oz triple sec
1/4 oz simple syrup
1/4 oz amaretto
3/4 oz dark rum
Lime peel or pineapple spear, optional for garnish


  1. Fill cocktail shaker with ice; add all ingredients (except dark rum and garnish).
  2. Shake well; strain into an ice-filled rocks glass and float the dark rum onto the top.
  3. Garnish with lime peel or pineapple spear, if desired.

Other Preparation Methods

Make it a Planters Punch.
Substitute orange juice for the triple sec and add a splash or two of grenadine.

Make it a Melon Mai Tai.
Add all ingredients (except garnish) and 1/2 cup of diced watermelon to a blender. Blend on high until no chunks remain; pour into an ice-filled highball or Collins glass; add garnish.

Food Pairing: Serve with Citrus Garlic Baked Fish with Rice.
