Parchment paper
24 regular marshmallows
1 (10-oz) package dark chocolate candy melts
1 (10-oz) package white chocolate candy melts
20 drops green food coloring
24 fudge-striped shortbread cookies
Small zip-top bag


  1. Line baking sheet with parchment paper. Thread each marshmallow onto a toothpick. Melt dark chocolate candies following package instructions.
  2. Dip marshmallows into chocolate up to the top edge, letting any excess drip off. Place on parchment paper and let stand until completely set. Remove toothpick.
  3. Melt white chocolate candies following package instructions; stir in food coloring until blended. Arrange cookies with the fudge side up on baking sheet. Dip uncovered tops of marshmallows into the tinted white chocolate, letting any excess drip off. Place marshmallows in the center of the cookies.
  4. Spoon remaining tinted white chocolate into zip-top bag; snip corner of bag. Squeeze three small dots (in the shape of a triangle) on the side of the marshmallow; using a toothpick, join the dots to form a shamrock, then pull the toothpick straight down to form a stem. (For easier shamrocks, you can form the shamrocks directly on the parchment paper; let them set up, then attach to the hats using a dot of warm candy melts.)
