Gingerbread Waffles with Sautéed Pears

3 medium ripe pears
8 tablespoons unsalted butter, divided
1 tablespoon sugar
3 cups dry Belgian waffle mix*
1 1/3 cups water
2 eggs, beaten (or 1/2 cup egg substitute)
2 teaspoons ground cinnamon, divided
1 1/2 teaspoons ground ginger
2 tablespoons molasses
Cooking spray
1/2 cup vanilla low-fat yogurt, divided


  1. Preheat Belgian waffle iron on medium. Remove core from pears and slice thinly. Place 2 tablespoons butter in large sauté pan on medium heat. Add pears and cook 5–6 minutes, stirring occasionally, or until softened. Sprinkle pears with sugar; cook 2–3 more minutes or until tender and browned. Set aside and cover to keep warm.
  2. Melt remaining 6 tablespoons butter; place in medium bowl. Stir in waffle mix, water, eggs, 1 1/2 teaspoons cinnamon, ginger, and molasses until smooth. Let batter stand 2 minutes. Coat waffle iron with spray. Pour about 2/3 cup batter into iron; cook 3–4 minutes or until browned and steaming. Repeat with remaining batter.
  3. Top each waffle with pears and 1 tablespoon yogurt; sprinkle with cinnamon. Serve.
*NOTE: Some waffle mixes may require different measures of liquid ingredients; adjust as needed.
