4 cloves garlic, finely chopped
2 limes, for juice
2 tablespoons olive oil
8 oz trinity mix (fresh diced onions, bell peppers, celery)
1 1/2 lb lean ground beef, 7% fat
1 teaspoon dried oregano
1/2 teaspoon smoked paprika
1/2 teaspoon kosher salt
1/2 teaspoon pepper
1 can (or box) unsalted tomato sauce (15–17 oz)
1/2 cup sliced, stuffed green olives
1/4 cup golden raisins
1 tablespoon capers


  1. Chop garlic; squeeze limes for juice (2 tablespoons). Preheat large, nonstick sauté pan on medium-high 2–3 minutes. Place oil in pan, then add trinity mix; cook 4–5 minutes, stirring occasionally, or until onions are tender and beginning to brown. Stir in garlic; cook 1–2 minutes or until garlic is fragrant.
  2. Add beef, oregano, paprika, salt, and pepper; brown meat 6–8 minutes, stirring to crumble, or until no pink remains. Reduce heat to low; stir in remaining ingredients (including lime juice). Cover and simmer 20–25 minutes or until sauce has thickened. Serve.
