Ingredients

2 pears (or apples)
1 medium yellow onion
1 lb boneless chicken cutlets
3/4 teaspoon kosher salt, divided
1/4 teaspoon pepper
2 tablespoons canola oil
2 tablespoons unsalted butter
2/3 cup chicken broth (or stock)
1/3 cup heavy whipping cream
2 tablespoons brown sugar
2 teaspoons ground cinnamon
1/8 teaspoon ground red pepper
1 package fresh baby spinach (5–6 oz)

Steps

  1. Halve pears and onion; remove core from pears then slice both pears and onion thinly. Preheat large, nonstick sauté pan on medium-high 2–3 minutes. Season chicken with 1/2 teaspoon salt and 1/4 teaspoon pepper. Place oil in pan, then add chicken; cook 1–2 minutes on each side or until browned. Remove chicken from pan.
  2. Reduce heat to medium. Add butter to same pan, then stir in pears and onions; cook 5–6 minutes or until tender and browned. Stir in broth, cream, sugar, cinnamon, red pepper, and remaining 1/4 teaspoon salt; bring to a boil.
  3. Return chicken to pan; simmer 2–3 minutes or until sauce thickens and chicken is 165°F. Stir in spinach; cook 1 more minute or until wilted. Serve.
