Chicken and Hummingbird Waffles with Banana-Bourbon Syrup

... For the waffles
4 large eggs
2 cups buttermilk
1/4 cup brown sugar
1/2 teaspoon cream of tartar
2 cups all-purpose flour
3 teaspoons baking soda
1/2 teaspoon kosher salt
1 teaspoon ground cinnamon
3/4 cup chopped pecans
4 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
Cooking spray
2 lb hot Deli chicken tenders

... For the syrup
2 large bananas, sliced
3 tablespoons unsalted butter
3 tablespoons bourbon
1 cup maple syrup
1 1/2 teaspoons vanilla extract
1/2 teaspoon ground cinnamon


  1. Prepare waffles. Preheat waffle iron following manufacturer's instructions.
  2. Separate egg yolks from whites, placing each in separate bowls. Whisk egg yolks, buttermilk, and brown sugar until blended. Beat egg whites and cream of tartar with hand (or stand) mixer on high speed until stiff peaks form.
  3. Combine flour, baking soda, salt, and cinnamon; stir in egg yolk mixture, pecans, melted butter, and vanilla until blended. Gently fold egg whites into batter until thoroughly combined.
  4. Coat waffle iron with spray. Pour 3/4 cup batter into waffle iron; cook 3–4 minutes or until crisp and fluffy. Repeat with remaining batter. Cover waffles to keep warm.
  5. Prepare syrup. Slice bananas into 1/2-inch-thick coins. Place butter in a large, nonstick sauté pan on medium to melt. Add banana slices in single layer when butter is frothy; cook 2 minutes or until golden. Flip bananas over and cook 1 more minute, then transfer banana slices to a plate. Repeat with remaining banana slices if needed.
  6. Remove pan from heat; add bourbon, then return to heat and let simmer 1 minute. Add syrup, vanilla, and cinnamon; cook 2–3 minutes or until syrup is hot, then add bananas. Top each waffle with two chicken tenders and drizzle with banana-bourbon syrup; serve.
