Breaded Pork Sandwich

1/4 cup all-purpose flour
2 eggs, beaten (or 1/2 cup egg substitute)
1 sleeve saltine crackers, crushed (about 2 cups)
2 pork cubed steaks (about 1 lb)
1/3 cup canola oil
4 hamburger buns
4 teaspoons Dijon mustard
2 cups lettuce shreds


  1. Place flour in shallow bowl. Place eggs in second bowl and cracker crumbs in third bowl. Dip pork in flour (coating both sides), then dip into eggs (allowing excess to drip off). Finally, dip into cracker crumbs.
  2. Preheat large sauté pan on medium 1–2 minutes. Place oil in pan; then add pork steaks (one at a time); cook 3–4 minutes on each side or until golden. Repeat.
  3. Coat top halves of buns with mustard. Cut pork steaks in half; place on bottom halves of buns. Top each with lettuce shreds and assemble.

Other Preparation Methods

  • Stovetop: Cut 1 lb pork cubed steaks into bite-size strips; toss with 2 tablespoons flour. Preheat large sauté pan on medium-high 2–3 minutes. Place 1 tablespoon oil in pan, then add pork; cook and stir 2–3 minutes or until browned. Reduce heat to low. Stir in 1 (10.75-oz) can condensed cream of mushroom soup and 1/2 cup beef broth, then cover; simmer 3–4 minutes or until hot. Serve over cooked egg noodles.
