Berry Shortcake

4 cups mixed berries (blackberries, raspberries, blueberries, and/or strawberries)
1/4 cup light brown sugar
1/4 cup maple syrup
1 tablespoon cornstarch
1 teaspoon ground cinnamon
6 (1-oz) shortcake dessert shells (or pound cake slices or waffles)
Whipped topping or ice cream (optional)


  1. Place berries in stockpot on medium; cook and stir 5–6 minutes or until berries start to release their juices.
  2. Whisk remaining ingredients (except cake and topping) until blended; stir into berries. Cook and stir 2–3 minutes or until mixture comes to a simmer and begins to thicken.
  3. Serve berry mixture warm (or chilled) over cake; add topping, if desired.

Other Preparation Methods

  • Milkshake: Place 1 cup milk, 3 cups mixed berries, and 4 cups softened vanilla ice cream in blender; blend until smooth.
  • Vinaigrette: Place 1 cup mixed berries, 1/2 cup olive oil, 1/4 cup cider vinegar, 1 tablespoon honey, 1 teaspoon Italian seasoning, and 1\2 teaspoon salt in blender; blend until smooth. Toss 1/2 cup of the dressing with 6 oz baby spinach and 1/2 cup each praline pecans, crumbled feta cheese, and yogurt-covered raisins.
