A 4-ounce serving of chicken breast meat without the skin is only 186 calories, with 4 grams of total fat, 1 gram of saturated fat, and 84 milligrams of sodium. The birds are cooled quickly throughout so there is less danger of cross-contamination.

Compare that method with most conventional chicken, which is chilled by being immersed in water. The meat can absorb some of the water, taking away from its flavor and texture. Air-chilling, on the other hand, is a safe, clean, and efficient process that is environmentally friendly, as it significantly reduces the amount of water used. Plus it locks in the chicken's natural flavor, texture, and tenderness.
