Chicken: Delicious & Nutritious
Naturally raised chicken makes an already healthy favorite even more appealing.
|No bones about it, we love our chicken. In 2003, Americans ate more than 80 pounds of chicken per person, according to the U.S. Poultry and Egg Association. And why not? Chicken is versatile, tasty, and nutritious.
A healthy choice for any meal, chicken is naturally good for you. A 4-ounce serving of chicken breast meat without the skin is only 186 calories, with 4 grams of total fat, 1 gram of saturated fat, and 84 milligrams of sodium. It provides 35 grams of high-quality protein, in addition to iron, zinc, vitamin B12, and selenium. Another bonus is its versatility, especially for quick meals. It's easy to get a different take on a chicken dinner every night of the week. Throw it on the grill, stir-fry it with vegetables, shred it for pizza or quesadillas, stir it sautéed into a sauce for pasta, or simply roast or bake it whole or in pieces.
With Publix GreenWise Market Chicken, the benefits are truly something to cluck about. The chickens are nothing but natural. From day one, these birds have been raised without antibiotics. Other chickens might not contain residual antibiotics when they hit the supermarket shelf, but they could have received antibiotics at some point. By law, hormones cannot be administered to poultry.
The chickens are raised humanely in clean flock houses with plenty of fresh air, space, and light. What's more, they are fed a vegetarian diet fortified with vitamins and minerals for optimal health.
|When it comes time for processing, Publix suppliers use a state-of-the-art air-chill system. The chickens are suspended individually and move along a track through a one-tier, air-chilled chamber that circulates clean, dry, filtered cold air. The inside of the bird and portions of the chicken that have a thicker layer of meat, such as the breast, are chilled with a direct flow of air to ensure safe temperatures. The birds are cooled quickly throughout so there is less danger of cross-contamination.
Compare that method with most conventional chicken, which is chilled by being immersed in water. The meat can absorb some of the water, taking away from its flavor and texture. Air-chilling, on the other hand, is a safe, clean, and efficient process that is environmentally friendly, as it significantly reduces the amount of water used. Plus it locks in the chicken's natural flavor, texture, and tenderness.
Publix offers a wide variety of Publix GreenWise Market Chicken options to suit any taste, cooking method, or recipe. Whether you're looking for boneless, skinless chicken breasts, skinless chicken thighs, or a whole chicken, you'll find it at your neighborhood Publix.
