Zesty Dijon Steaks with Warm Italian Potato Salad

Cooking Sequence


-- Prepare potatoes through step 2 (20 minutes)
-- Prepare steak and begin to grill with potatoes - (5 minutes)
-- Complete both recipes and serve (15 minutes)

Zesty Dijon Steaks

Ingredients

1 1/2 lb grilling steaks (such as NY strip, ribeye, or tenderloin)

1/2 teaspoon kosher salt

1/4 teaspoon black pepper

2 tablespoons fresh chives, finely chopped

1/4 cup Dijon mustard

1/4 cup red wine vinegar

1/4 cup honey

Steps


1. Preheat grill (or grill pan). Season steaks with salt and pepper. Place steaks on grill (or grill pan); grill 4-5 minutes on each side or until steaks are 145°F (for medium rare). Let steaks stand 5 minutes.
2. Chop chives and place in medium bowl; whisk in mustard, wine vinegar, and honey until blended. Drizzle steaks with sauce and serve.

Warm Italian Potato Salad

Ingredients

2 medium russet potatoes

2 medium sweet potatoes

Nonstick aluminum foil

2 tablespoons fresh chives, finely chopped

1/2 cup mayonnaise

1/2 cup plain Greek yogurt

1/4 cup Italian seasoning herb paste

1/2 teaspoon kosher salt

1/4 teaspoon pepper

Prep


-- Preheat grill (or grill pan).
-- Peel potatoes and cut into 1-inch-cubes (about 6 cups total).

Steps


1. Place potatoes in microwave-safe dish and cover; microwave on HIGH 10 minutes. Drain, if needed.
2. Arrange potatoes on 12-inch-square foil sheet; top with second sheet of foil. Double-fold all sides to seal and form a pouch.
3. Place pouch on grill; grill 4-5 minutes on each side or until potatoes are tender.
4. Chop chives and place in large bowl; whisk in mayonnaise, yogurt, herb paste, salt, and pepper until blended. Add potatoes and toss until evenly coated; serve warm. Salad may also be chilled and served cold. (Makes 6 servings.)
