White Chicken and Broccoli Pizza With American Side Salad

-- Prepare pizza and begin to bake - 15 minutes

-- Prepare salad and serve - 15 minutes


White Chicken and Broccoli Pizza

Ingredients

1 1/2 cups fresh broccoli florets

2 cups roasted chicken (10 oz)

1 cup pre-sliced mushrooms

1 cup Alfredo sauce

1 (12-oz) baked pizza crust

2 cups shredded Italian-blend cheese

1 cup shredded Swiss cheese

1 teaspoon dried basil

1/4 teaspoon dried oregano

1/4 teaspoon garlic salt

Olive oil cooking spray

Prep


-- Place oven rack in center of oven; then preheat to 425ºF.

-- Cut broccoli into bite-size pieces; place in medium bowl.

-- Tear chicken into bite-size pieces, if needed; add to broccoli.


Steps


1. Stir in mushrooms and Alfredo sauce.

2. Place pizza crust on perforated pizza pan (for best results); spread chicken mixture evenly over crust to within 1/2 inch of edge. Spread both cheeses evenly over pizza; then sprinkle with basil, oregano, and garlic salt.

3. Coat top of pizza lightly with cooking spray. Bake 15 minutes or until cheese is melted and bubbly. Slice and serve.


American Side Salad

Ingredients

1 bag iceberg lettuce salad blend (12-14 oz)

1 cucumber (rinsed)

8-10 radishes (rinsed)

1/2 cup grape tomatoes (rinsed)

1/3 cup balsamic vinaigrette

Steps

1. Place salad blend in salad bowl. Peel cucumber. Cut cucumber and radishes into bite-size pieces; add to salad.

2. Add tomatoes and dressing; toss to coat and serve.

-- Chilled (or leftover) rotisserie chicken adds a gourmet flavor to this recipe. Just remove chicken from skin and bones; then cut into bite-size pieces.
