Cooking Sequence

  • Prepare entrée (following package instructions)
  • Prepare green beans (25 minutes)
  • Prepare salad; serve (5 minutes)

Sweet and Sour Green Beans

1 small onion, thinly sliced
12 oz fresh green beans, cut in half
4 slices thick-cut bacon
8 oz presliced baby portabellas
2 tablespoons apple cider vinegar
1 tablespoon sugar
3/4 teaspoon kosher salt
1/2 teaspoon pepper

  • Slice onion. Cut beans in half horizontally.
  • Chop bacon into 1-inch pieces (wash hands).

  1. Preheat large, nonstick sauté pan on medium-high 2–3 minutes. Place bacon in pan; cook and stir 6–8 minutes or until browned. Remove bacon from pan; reserve 3 tablespoons bacon fat in pan.
  2. Add beans to bacon fat; cook and stir 5 minutes. Stir in onions and mushrooms; cook and stir 5 minutes.
  3. Stir in vinegar, sugar, salt, and pepper; cook and stir 1 minute or until sugar dissolves. Stir bacon into bean mixture. Serve. (Makes 6 servings.)

Spinach Pineapple Salad

1 bag baby spinach (or arugula) leaves (4–6 oz)
1/3 cup praline pecans, finely chopped
4 oz fresh pineapple chunks, finely chopped
1/2 cup crumbled feta cheese
1/4 cup poppy seed dressing

  1. Place spinach in salad bowl. Chop nuts and pineapple; add to spinach.
  2. Add feta and dressing; toss and serve.
