Ultimate Meatball Hoagies and No-Bake Mud Pie

Cooking Sequence

-- Preheat oven; set butter out

-- Prepare pie and chill - 10 minutes

-- Prepare hoagies; serve - 20 minutes

Ultimate Meatball Hoagies


24 slices turkey pepperoni, halved

1 (20-oz) package cooked meatballs with sauce

1/2 cup fried peppers and onions

1/4 cup sliced black olives

2 tablespoons basil pesto

4 Bakery hoagie rolls

2 tablespoons garlic herb butter

1 cup shredded mozzarella cheese, divided


-- Preheat oven to 425°F.

-- Let butter stand to soften.

-- Slice pepperoni (about 1/2 cup).


1. Heat meatballs in microwave following package instructions.

2. Combine peppers and onions, olives, pesto, and pepperoni. Cut rolls open lengthwise; spread butter over inside of rolls.

3. Cut meatballs in half. Place meatballs and sauce in each roll; top with pepper mixture and then cheese. Place hoagies on baking sheet; bake 6-7 minutes to melt cheese and toast bread. Serve.

No-Bake Mud Pie


1/2 (7-oz) packet chocolate crème icing

1 (6-oz) chocolate pie crust

4 Bakery brownies with cream cheese icing

4 (2.3-oz) cups sugar-free dark chocolate mousse

1/2 cup mini chocolate morsels


1. Squeeze icing evenly over bottom of crust; top with brownies (cut to fit).

2. Spread layer of mousse on top; sprinkle with morsels. Chill pie for 20 minutes or until ready to serve.

Aprons Advice

-- Complete your meal with a hearty soup, fresh salad blend, and whipped topping for the pie.

-- The hoagies can be made with garlic bread instead of rolls. Also, you can use fresh bell peppers and onions, very thinly sliced, instead of the fried ones.
