Maple Walnut Apple Crisp

Ingredients

Butter-flavored cooking spray

5 tablespoons butter

2 (20-oz) cans sliced apples

3 packets maple and brown sugar instant oatmeal

1/2 cup maple syrup, divided

1 tablespoon cornstarch

1 (2.3-oz) bag chopped walnuts

Steps

Total Time: 50 minutes (Makes 8 servings)

1. Preheat oven to 400°F. Coat 8-inch-square baking dish with cooking spray. Place butter in a microwave-safe bowl; microwave on HIGH 30 seconds or until butter melts.

2. Place apples in microwave-safe bowl and cover; microwave on HIGH 3 minutes or until hot.

3. Combine in medium bowl, oatmeal, 1/4 cup syrup, and melted butter until oatmeal is moist.

4. Drain apples and return to bowl. Stir in cornstarch, remaining 1/4 cup syrup, and walnuts.

5. Transfer apple mixture to baking dish; spread oatmeal mixture on top. Bake 30 minutes or until golden brown. Let stand 10 minutes. Serve.


Gogi's Hawaiian Creme Pie

Ingredients

2 pints fresh strawberries

1 (3.4-oz) box vanilla instant pudding mix

1 3/4 cups whole milk

1 (9-oz) graham cracker pie crust

1 (20-oz) can crushed pineapple in juice (well drained)

1 cup coconut shreds

Whipped topping (optional)

Steps

Total Time: 1 hour, 15 minutes (Makes 8 servings)

1. Cut strawberries in half.

2. Whisk pudding and milk in medium bowl until thick. Transfer enough pudding to crust to cover bottom.

3. Spread pineapple on top of pudding; sprinkle with coconut.

4. Add remaining pudding and top with strawberries. Chill 1 hour.

5. Top with whipped topping and serve.


Peanut Butter Banana Pudding

Ingredients

1 (16-oz) container half-and-half

1 (5 1/8-oz) box vanilla instant pudding mix

1/2 teaspoon vanilla extract

2 tablespoons creamy peanut butter

2 large Bakery peanut butter cookies

Large zip-top bag

2 bananas

Whipped topping (optional)

Steps

Total Time: 20 minutes (Makes 4 servings)

1. Place in medium bowl, half-and-half, pudding, and vanilla extract. Using mixer, mix on low speed 30 seconds or until blended.

2. Turn mixer to medium-high speed; blend 2 minutes. Add peanut butter and mix on medium-high 1 minute. Place in freezer for 5 minutes.

3. Place cookies in zip-top bag. Crumble with fingers then crush with meat mallet or rolling pin until largest crumbles are the size of peas.

4. Cut bananas into 1/4-inch-thick slices; gently mix into pudding mixture. Divide pudding evenly between serving dishes.

5. Sprinkle with cookies; top with whipped topping and serve.
