Spanish Pork Chops and Rice With Avocado and Greens Salad

-- Prepare salad and complete pork chops; serve - 15 minutes

Spanish Pork Chops and Rice


1 1/2 pounds boneless pork loin chops (3/4-inch thick)

2 teaspoons adobo seasoning with pepper

2 tablespoons extra-virgin olive oil

1/2 cup fresh pre-diced onions

1 (10-ounce) can milder diced tomatoes/green chiles (drained)

1 (5-gram) packet sazón with azafrán seasoning

1 (15-ounce) can green pigeon peas (drained)

1 (14-ounce) can chicken broth with roasted garlic

2 1/2 cups instant rice


1. Preheat large saucepan on medium-high 2-3 minutes. Sprinkle both sides of pork chops with adobo seasoning. Wash hands.

2. Place oil in pan; swirl to coat. Add pork chops, using tongs; add onions. Cook pork chops 3-4 minutes on each side until browned.

3. Move pork chops to outer edge of pan; stir in tomatoes, sazón seasoning, peas, and broth. Cover, increase to high, and bring to a boil.

4. Stir rice into boiling mixture; cover, reduce to low, and simmer 8 minutes or until all liquid is absorbed. Serve.

Avocado and Greens Salad


1 clove fresh garlic

2 tablespoons extra-virgin olive oil

2 tablespoons balsamic vinegar

10 ounces European salad blend

1 cup grape tomatoes (rinsed)

1/4 cup fresh pre-diced onions

1 avocado (rinsed)


1. Cut garlic clove in half and rub the cut edges over inside of salad bowl. Add oil and vinegar; whisk until well blended.

2. Add salad blend, tomatoes, and onions. Cut avocado into quarters; remove peel and cut fruit into bite-size pieces. Add to salad; toss well to blend. Serve.
