Shrimp Piquant With Gumbo Rice

Cooking Sequence

Chop all parsley and measure; set aside - 5 minutes

Prepare shrimp through step 2 - 5 minutes

Prepare rice and begin to microwave - 5 minutes

Complete shrimp and rice; serve - 10 minutes

Shrimp Piquant


8-10 sprigs fresh Italian parsley

1 tablespoon flour

1 tablespoon Emeril's Essence® Seasoning

large zip-top bag

1 pound peeled/deveined shrimp (thawed)

2 ounces salt pork (2 slices)

1 tablespoon canola oil

1 tablespoon garlic paste

1 (8-ounce) container trinity mix (contains diced onions, bell peppers, and celery)

1/4 cup cream sherry

1 cup spicy pasta sauce


1. Chop (rinsed) parsley leaves coarsely and measure (2 tablespoons); set aside. Place flour and seasoning in zip-top bag; shake to mix. Add shrimp, seal tightly, and shake to coat; set aside.

2. Preheat large sauté pan on medium-high 2-3 minutes. Cut salt pork into small pieces. Wash hands. Place oil in pan; swirl to coat. Add salt pork (using tongs) and garlic paste; cook 3-4 minutes, stirring occasionally, until browned.

3. Stir in trinity mix; cook 3-4 minutes, stirring occasionally, until tender. Add shrimp, using tongs; cook 2-3 minutes, stirring often, just until shrimp are pink.

4. Stir in sherry and pasta sauce; cook 2-3 minutes or until thoroughly heated and sauce thickens. Stir in parsley and serve.

Gumbo Rice


8-10 sprigs fresh Italian parsley

2 (8.8-ounce) pouches pre-cooked long grain rice

1 (14.5-ounce) can tomatoes and okra (drained)

1 (11-ounce) can Mexican-style corn (drained)


1. Chop (rinsed) parsley leaves coarsely and measure (2 tablespoons); set aside.

2. Combine all ingredients (except parsley) in microwave-safe bowl. Cover and microwave on HIGH 8 minutes, stirring occasionally, until thoroughly heated.

3. Stir parsley into rice and serve.

Aprons Advice

To really heat things up, add a little hot sauce to either recipe before serving.
