-- Preheat oven; prepare turnovers through step 2 - 20 minutes

-- Prepare tostadas; assemble and serve - 20 minutes

Shredded Pork Tostadas

Ingredients

1 (17-oz) package fully cooked pork roast

6 tostada shells

3/4 cup salsa with queso dip

1 (15.5-oz) can black beans (rinsed and drained)

1 1/2 cups shredded lettuce

1 cup fresh pre-diced tomatoes

1/4 teaspoon chipotle pepper sauce

Prep


-- Preheat oven to 350°F.

-- Microwave pork on HIGH 2-3 minutes or until hot. Discard gravy; shred pork with two forks.

Steps


1. Arrange shells on baking sheet. Place 2 tablespoons cheese dip in center of each tostada shell; divide beans and pork evenly between shells. Bake 5-7 minutes or until cheese melts and tostadas crisp.

2. Top with lettuce, tomatoes, and pepper sauce. Serve.

Cinnamon-Plantain Turnovers

Ingredients

2 cups frozen light non-dairy whipped topping

1 (11-oz) box frozen ripe plantains

1 egg (or 1/4 cup egg substitute)

2 tablespoons water

1/4 cup corn syrup (or honey)

3 3/4 teaspoons cinnamon-sugar, divided

1 (10.1-oz) can larger-size crescent rolls

Prep


-- Preheat oven to 350°F. Place whipped topping in medium bowl to soften.

-- Cut plantains into bite-size pieces; place in second medium bowl.

-- Beat egg and water until blended.

Steps


1. Stir corn syrup and 1 teaspoon cinnamon-sugar into plantains. Unroll dough on baking sheet; separate rolls. Divide plantains and arrange on three of the rolls; top with remaining three rolls and crimp edges to seal. Sprinkle 1/4 teaspoon cinnamon-sugar over each, then brush with egg wash; bake 15-20 minutes or until golden.

2. Whisk whipped topping and remaining 2 teaspoons cinnamon-sugar; chill.

3. Cut each turnover in half. Top with cinnamon-sugar whipped topping and serve.
