-- Preheat oven; bake pie crust - 20 minutes

-- Continue pie and begin to bake - 5 minutes

-- Prepare shrimp recipe; serve - 20 minutes


Savory Shrimp and Grits

Ingredients

1 1/2 cups quick-cooking grits

2 cups water

1/2 teaspoon kosher salt

2 tablespoons extra-virgin olive oil

1 (8-oz) tomato trinity mix (fresh diced tomatoes, onions, bell peppers)

1 lb peeled/deveined shrimp

2 tablespoons salt-free tomato-basil seasoning

1 can diced tomatoes with chiles (10-14 oz; undrained)

1 (14.5-oz) can diced tomatoes with green pepper, celery, & onion (undrained)

Steps


1. Prepare grits (using water and salt) following package instructions

2. Preheat large sauté pan on medium-high 2-3 minutes. Place oil in pan, then add trinity mix, shrimp, and seasoning; cook 4-5 minutes or until vegetables are tender.

3. Stir in tomatoes; simmer 4-5 minutes or until heated and shrimp turn pink and opaque. Stir into grits. Serve.


Plantain Queso Pie

Ingredients

2 (11-oz) boxes frozen ripe plantains, thawed

4 oz Colby Jack cheese

1 frozen prepared pie crust

1/3 cup mango jam

Prep


-- Preheat oven to 425°F.

-- Thaw plantains or microwave on HIGH for 20-30 seconds to soften; cut into bite-size pieces.

-- Shred cheese (1 cup).


Steps


1. Place crust on baking sheet (for ease in handling); bake 8-10 minutes or until lightly browned.

2. Spread plantains evenly over pie crust. Microwave jam on HIGH for 30 seconds or until melted; pour over plantains. Top with cheese; bake 10-15 minutes or until cheese melts and pie is thoroughly heated. Serve warm. (Makes 8 servings.)

-- For less heat in the shrimp recipe, you can substitute the milder version of tomatoes with chiles.
