Roasted Pork and Cilantro Cream With Sweet and Spicy Mash

Cooking Sequence

-- Prepare pork and begin to bake - 10 minutes

-- Prepare potatoes and complete pork; serve - 20 minutes

Roasted Pork and Cilantro Cream


3 tablespoons fresh cilantro, coarsely chopped

1 tablespoon green onions, coarsely chopped

1 pork tenderloin (about 1 lb)

juice of 1 lime

1 tablespoon salt-free southwest seasoning

1/2 teaspoon kosher salt

1/4 cup mojo marinade

1/4 cup fat-free sour cream


-- Preheat oven to 450°F.

-- Chop cilantro and green onions.

-- Squeeze lime for juice (1 tablespoon).


1. Season pork with southwest seasoning and salt, then place in baking pan. Pour marinade over pork; bake 15-18 minutes or until 160°F (for medium). Let stand 2-3 minutes before serving.

2. Combine sour cream, lime juice, green onions, and cilantro until blended. Slice pork and drizzle with sauce. Serve.

Sweet and Spicy Mash


2 large sweet potatoes

1 tablespoon canola oil

1 teaspoon salt-free southwest seasoning

2 teaspoons agave nectar (or honey)

1/2 teaspoon kosher salt


-- Peel sweet potatoes; cut into small bite-size pieces (4 cups).


1. Place sweet potatoes in microwave-safe dish and cover; microwave on HIGH 8-10 minutes or until beginning to soften.

2. Add remaining ingredients; mash until smooth. Serve.

-- Complete your meal with queso fresco or feta cheese (to top sweet potatoes), steamed broccoli, Cuban bread, and cheesecake for dessert.

-- If you have leftovers, make quesadillas with the pork, cheese, and sweet potatoes.
