Cooking Sequence


-- Prepare chicken and begin to grill - 10 minutes


-- Prepare potatoes through step 2 - 10 minutes


-- Prepare spinach, complete potatoes and chicken; serve - 15 minutes


Mojo Chicken

Ingredients

12-15 sprigs fresh cilantro (rinsed)

1 cup mojo marinade

2 teaspoons roasted garlic

1 whole cut-up chicken (3 1/2 lb)

Steps

1. Preheat 2-sided tabletop grill. Chop cilantro leaves finely (1/4 cup); place in large microwave-safe bowl. Stir in marinade and garlic. Reserve and set aside 1/4 cup of mixture for basting.

2. Add chicken (wash hands) and stir until evenly coated. Cover and microwave on HIGH 4 minutes, stirring once, or until chicken begins to get hot.

3. Place chicken on grill (wash hands), discarding marinade that has come in contact with raw chicken. Close lid and begin to grill chicken. Brush top of chicken, with reserved marinade only, every five minutes. Grill 18-20 minutes or until internal temperature reaches 165°F. Use a meat thermometer to accurately ensure doneness. (If using a regular grill, double cooking time; turning once.) Serve. (Makes 6 servings.)

Smashed Potatoes

Ingredients

1 (20-ounce) bag refrigerated homestyle sliced potatoes

1 1/4 cups reduced-sodium chicken broth

1 tablespoon minced onions

2 tablespoons unsalted butter

1/2 teaspoon salt

1/4 teaspoon pepper

Steps

1. Combine potatoes, broth, and onions in medium saucepan; cover and cook on high 5 minutes or until boiling.

2. Reduce heat to medium; cook 10-12 minutes, stirring occasionally, or until potatoes are soft.

3. Drain potatoes; return to same pan. Stir in butter, salt, and pepper; mash potatoes slightly and serve.

Spinach-Tomato Sauté

Ingredients

cooking spray

2 teaspoons roasted garlic

1 (10-ounce) can milder diced tomatoes with green chiles (very well-drained)

2 tablespoons sliced black olives (drained)

1 bag fresh spinach leaves (9-10 oz)

Steps

1. Preheat large sauté pan on medium-high 2-3 minutes. Remove pan from heat and coat with cooking spray. Add garlic; cook 1 minute to bring out flavor.

2. Stir in remaining ingredients. Cook 3-5 minutes, stirring occasionally, or until heated and spinach just begins to wilt. Serve.
