Ham and Beans With Sausage and Cheddar-Pimiento Biscuits

Cooking Sequence

-- Prepare ham and beans - 10 minutes

-- Preheat oven

-- Prepare biscuits; serve - 30 minutes

Ham and Beans With Sausage


1 large yellow onion, coarsely chopped

3 smoked sausage links (7 oz)

2 tablespoons unsalted butter

1 (8-oz) package cooked ham chunks

1 (32-oz) box reduced-sodium chicken broth

2 cans pinto beans (15-16 oz), drained

1 can great Northern beans (15-16 oz), drained

1 bay leaf


-- Chop onion.

-- Cut sausage into bite-size pieces.


1. Preheat stock pot on medium 2-3 minutes. Place butter, sausage, ham, and onions in pan; cook and stir 3-4 minutes or until onions have softened.

2. Stir in broth, both beans, and bay leaf; simmer 25-30 minutes or until mixture reduces by about one-half. Remove bay leaf and serve.

Cheddar-Pimiento Biscuits


Cooking spray

1 (7.75-oz) package cheese-garlic biscuit mix

1 cup shredded sharp Cheddar cheese

1 (4-oz) jar diced pimientos, drained

1/2 cup water


-- Preheat oven to 450°F. Coat baking sheet with spray.


1. Combine remaining ingredients. Drop into 6 biscuits (by 1/4 cupfuls) onto baking sheet.

2. Bake 10-12 minutes or until edges are golden. Let stand 5 minutes to cool. Serve.

-- Complete your meal with a fresh salad blend, corn on the cob, and apple pie for dessert.

-- For a more robust smoky flavor, try adding ham hocks during step 2.
