Cooking Sequence

  • Prepare dinner entrée (if serving) and begin to cook (10 minutes)
  • Meanwhile, prepare your choice of sides (10 minutes)
  • Prepare either yogurt recipe for dessert; serve (10 minutes)

Floribbean Yogurt

Ingredients

1 mango
1 Hass avocado
2 cups plain nonfat Greek yogurt
1 (6.5-oz) container no-sugar-added grapefruit sections, drained
4 tablespoons roasted/salted pepitas (pumpkin seeds)

Steps

  1. Peel mango and avocado. Chop mango coarsely. Place avocado in bowl and mash with fork until desired texture. Fold (gently stir) yogurt into avocado; divide evenly into four serving bowls.
  2. Top each with mango and grapefruit; sprinkle with pepitas. Serve.

Movie Theater Yogurt

Ingredients

1 ripe banana
4 (22g) waffle cones (or waffle bowls)
2 cups plain nonfat Greek yogurt
1/4 cup chocolate hazelnut spread
2 cups caramel popcorn with nuts, divided

Steps

  1. Peel banana and slice thinly. Remove top 1-inch from each cone; crush top pieces coarsely.
  2. Place yogurt and chocolate spread in bowl; pull spoon through to blend and create swirls. Transfer yogurt mixture to cones.
  3. Top cones with bananas, popcorn, and cone pieces. Serve.
