Carne Asada With Salsa and Zesty Pinto Beans

-- Prepare steak through step 2 - 10 minutes

-- Prepare beans and complete steak; serve - 15 minutes


Carne Asada With Salsa

Ingredients

1 lb thin-sliced top round steak

2 teaspoons minced garlic

2 teaspoons Complete seasoning

2 tablespoons extra-virgin olive oil

juice of 1 lime

1 avocado

1/2 cup fresh salsa (from Produce)

Steps


1. Preheat large sauté pan on medium-high 2-3 minutes. Rub both sides of steak with garlic and Complete seasoning (wash hands). Place oil in pan, then add steak; cook 3-4 minutes on first side or until nicely browned.

2. Squeeze juice of one-half lime over steak. Turn steak and cook 3-4 minutes on second side or until steak is170°F (well done).

3. Cut avocado into quarters; then cut into bite-size pieces. (Score the cut side of the avocado in a crisscross pattern through the flesh, just down to the skin. Flatten skin slightly and slide knife across the bottom, next to the skin, to remove the cubes.)

4. Remove steak from pan; squeeze juice of remaining one-half lime over steak. Let stand 5 minutes; top with avocado and salsa. Serve.


Zesty Pinto Beans

Ingredients

2 tablespoons fresh cilantro, coarsley chopped

2 (15-16-oz) cans pinto beans

1 (8-oz) can tomato sauce

8 oz fresh pre-diced onions (1 1/2 cups)

2 teaspoons minced garlic

1/2 teaspoon Complete seasoning

Prep


-- Chop cilantro.


Steps


1. Combine all ingredients in medium saucepan (except cilantro) on medium heat; cook and stir 7-9 minutes or until thoroughly heated.

2. Remove pan from heat; stir in cilantro and serve. (Makes 6 servings.)
