California Shrimp Sandwiches With Grapefruit Salad

Cooking Sequence

-- Prepare grapefruit salad - 15 minutes

-- Prepare sandwiches and serve - 10 minutes

California Shrimp Sandwiches


3 cups frozen salad shrimp

large zip-top bag

1/4 cup mayonnaise

1/4 cup peach salsa

1 tablespoon dried parsley

1 tablespoon crumbled blue cheese

4 Bakery French Hamburger Rolls


1. Thaw shrimp by placing in large zip-top bag. Seal tightly and place under cold running water 5-10 minutes.

2. Combine remaining ingredients, except rolls, in medium bowl. Drain shrimp thoroughly and pat dry; stir into salsa mixture.

3. Slice rolls in half. Spoon shrimp mixture onto half of rolls; assemble and serve.

Grapefruit Salad


8 ounces salad blend with veggies (contains lettuce, cabbage, carrots, snow peas, and radishes)

1/4 cup matchstick carrots

2 large ruby red grapefruit (rinsed)

1 cup grape tomatoes (rinsed)

2 tablespoons french salad dressing

2 tablespoons honey

1/2 teaspoon celery seed


1. Place salad blend (about 3/4 bag) and carrots in salad bowl. Cut (peeled) grapefruit into bite-size pieces; add to salad. Cut tomatoes in half, if desired; add to salad.

2. Combine remaining ingredients in small bowl. Pour over salad; toss to coat and serve.

Aprons Advice

For a crispy roll, place in a preheated 350°F oven 6-8 minutes. Then slice and assemble.
