Cooking Sequence

  • Preheat oven; prepare salad and chill (10 minutes)
  • Prepare shepherd’s pie and begin to bake (25 minutes)
  • Complete shepherd’s pie; serve (35 minutes)

Beef Shepherd's Pie

Ingredients

4 cups frozen seasoned puffed potatoes
1 large shallot, finely chopped
1 tablespoon canola oil
1 lb ground beef
8 oz presliced white mushrooms
1 carton (or can) condensed cream of mushroom soup (10–12 oz)
1/2 cup whole milk
2 cups frozen peas and carrots
8 oz gluten-free pie crust dough (or 1 prepared pie crust)

Steps

  1. Preheat oven to 400°F. Place potatoes in 9-inch square baking dish; bake 12–14 minutes or until golden.
  2. Chop shallot. Preheat large sauté pan on medium-high 2–3 minutes. Place oil in pan, then add shallots and ground beef; brown 5–7 minutes, stirring to crumble meat, or until no pink remains. Add mushrooms; cook and stir 2–3 minutes or until mushrooms are tender.
  3. Stir in soup, milk, and peas and carrots; cook and stir 2–3 minutes or until hot and blended. Remove pan from heat.
  4. Place dough on sheet of wax paper (or parchment paper coated with cooking spray); top with second sheet of wax paper. Roll dough, with a rolling pin, until 1/4-inch thick and large enough to fit baking dish. (If using regular pie crust, no rolling needed; just trim or fold to fit.)
  5. Remove potatoes from oven; top with ground beef mixture. Place pie crust over ground beef; bake 25–30 minutes or until crust is golden. Let stand 5 minutes to cool. Serve.

Grape-Yogurt Salad

Ingredients

2 (5.3-oz) containers Greek yogurt with honey
1/2 cup whipped cream cheese
6 cups red or green seedless grapes (2 lb)
1/4 cup brown sugar
1/4 cup chopped pecans (or walnuts)

Steps

  1. Combine yogurt and cream cheese; stir in grapes.
  2. Combine brown sugar and nuts; sprinkle over salad. Chill until ready to serve.

  • Complete your meal with steamed broccoli, your favorite bread, and applesauce or meringue cookies for dessert.
  • The shepherd’s pie can be made with gluten-free dough or a regular pie crust.
  • You can also use ground turkey or chicken instead of ground beef in the same recipe.
