Ultimate Sriracha-Hoisin Spare Ribs

2 (3-lb) racks St. Louis spare ribs
2 tablespoons kosher salt
Black pepper, to taste
Heavy-duty aluminum foil
2 cups apple juice
2 tablespoons canola oil
4 cloves garlic, minced
2 tablespoons ginger, finely grated
2/3 cup hoisin sauce
1/4 cup sriracha sauce
1/4 cup apple cider vinegar
1 tablespoon fish sauce (optional)


  1. Preheat oven to 350°F. Pat ribs dry with paper towels. Cut each rack in half (wash hands). Season ribs with salt and pepper. Make 4 "boats" out of doubled-up sheets of foil (large enough to enclose each rib section). Place ribs in foil, meaty side up, and divide apple juice over ribs. Seal foil closed around the ribs, trapping juice inside (be careful not to break the foil). Place on baking sheets.
  2. Bake 2 1/2 hours. Remove from oven and let stand to cool.
  3. Preheat grill on medium. Mince garlic and grate ginger. Heat oil in medium saucepan on medium for 2–3 minutes. Add garlic and ginger; cook 1–2 minutes or until light golden. Stir in hoisin sauce, sriracha, cider vinegar, and fish sauce; cook and stir 5 minutes. Remove pan from heat; set aside to cool.
  4. Remove ribs from foil and place on grill. Grill ribs 3 minutes on each side, coating with sauce 2–3 times during grill time. Serve.
