Summer Vegetable Salad

Summer Vegetable Salad

1 lb fresh zucchini squash, sliced
3 cloves fresh garlic, finely chopped
3 medium tomatoes, coarsely chopped
1 small jalapeño pepper, finely chopped (optional)
3 tablespoons fresh cilantro, finely chopped
3 ears fresh corn
1 lime, for juice
2 tablespoons olive oil
1 teaspoon agave nectar (or honey)
1/2 teaspoon ground cumin
1/4 teaspoon kosher salt
1/4 teaspoon pepper
1 cup shelled edamame


  1. Slice zucchini thinly into half moon shapes. Chop garlic, tomatoes, jalapeño, and cilantro. Remove corn from cob. Squeeze lime for juice (1 tablespoon).
  2. In a large salad bowl whisk oil, agave, cumin, garlic, juice, salt, and pepper until blended. Add remaining ingredients and toss to coat. Serve.
