Smoked Beef Brisket

1/2 cup barbecue seasoning, divided
2 1/2 cups barbecue sauce
1 beef brisket (10 lb)
6 cups applewood smoking chips


  1. Stir 1 tablespoon barbecue seasoning into the barbecue sauce; cover and chill until needed. Sprinkle brisket with the remaining barbecue seasoning. Wrap meat tightly in plastic wrap; chill 8 hours (or overnight).
  2. Soak wood chips in enough water to cover (1 hour before needed). Preheat grill on medium. Arrange coals on either side of a drip pan in a charcoal* grill. Pour water into pan. Sprinkle half of the wood chips over the coals.
  3. Place brisket, fat side up, on the grill rack over water pan. Cover and smoke 3 hours or until the brisket reaches 165°F.
  4. Wrap brisket in foil and return to the grill. Cover and grill 1-2 hours more or until the brisket reaches 190°F to 195°F and a fork can easily be inserted into the center of meat. Add additional coals and water every hour or as needed to maintain temperature and moisture. Add additional wood chips as needed during the first 3 hours.
  5. Remove brisket from grill. Cover and let stand wrapped in the foil for 15 minutes. Slice across the grain. Microwave barbecue sauce 1-2 minutes or until hot. Smother brisket with barbecue sauce. Serve.

* For a gas grill, preheat grill. Reduce heat to low. Adjust for indirect cooking. Add wood chips according to manufacturer's directions. Grill as above, except place brisket on a rack in a roasting pan.
