1 (10-ounce) package roasted seasoned chicken
1/4 cup pre-diced celery
3/4 cup mayonnaise
2 tablespoons pre-diced onions
1/8 teaspoon salt-free herb/spice blend
1/8 teaspoon pepper
1 (11-ounce) can mandarin oranges (drained, about 1 cup)
4 Bakery croissants
1 medium tomato (rinsed)
4 lettuce leaves (rinsed)
1. Place chicken and celery in medium bowl, breaking chicken into bite-size pieces, if needed. Stir in mayonnaise, onions, spice blend, and pepper until well blended.
2. Fold (gently mix) oranges into chicken salad.
3. Cut croissants in half. Slice tomato into thin slices. Place lettuce leaves and tomato slices on bottom halves of croissants. Top with chicken salad and top halves of croissants. Serve.
