Green Bean Casserole with Crispy Onions

1 1/2 lb fresh green beans, trimmed and halved
3 tablespoons unsalted butter
8 oz presliced white mushrooms
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 cloves garlic, minced
3 tablespoons all-purpose flour
1 cup reduced-sodium vegetable (or chicken) broth
1/2 cup heavy cream
2 cups french-fried onions


  1. Preheat oven to 400°F. Bring lightly salted water to boil for blanching (cooking) green beans; add green beans and cook 3 minutes. Drain beans and set aside.
  2. Melt butter in 12-inch cast iron skillet on medium-high. Add mushrooms, salt, and pepper; cook and stir 3–5 minutes or until liquid is released. Stir in garlic; cook and stir 1 more minute. Stir in flour until mushrooms are fully coated.
  3. Add broth, 1/4 cup at a time, and stirring continuously; simmer 1 minute. Stir in cream and return to a simmer; cook 5–6 minutes, stirring frequently, or until sauce thickens.
  4. Stir green beans into sauce until evenly coated; sprinkle fried onions over the top. Bake 15 minutes or until sauce is bubbling and onions are a shade darker. Serve.
