Creamed Spinach Sole

Creamed Spinach Sole

1 (10-oz) package frozen chopped spinach, thawed
2 tablespoons salted butter, cut into small cubes
4 Dover sole fillets (about 1 lb)
1/2 cup grated Parmesan cheese
1/2 cup sour cream
1/2 cup light mayonnaise
1/2 teaspoon roasted garlic-herb seasoning


  1. Preheat oven to 500°F. Squeeze spinach dry; spread evenly over bottom of 2-quart baking dish and dot with butter. Arrange fish in single layer over spinach.
  2. Combine remaining ingredients (except seasoning) and divide evenly over fish, spreading to cover fillets; sprinkle with seasoning. Bake 8–10 minutes and until fish separates easily. Let stand 5 minutes before serving.
Always check fish for bones and cook to an internal temperature of 145°F.

Other Preparation Methods

  • Sauté: Place 3 tablespoons butter in large sauté pan on medium. Season 1 lb Dover sole fillets with salt, then dust with flour. Cook fish 4 minutes, turning once; remove from pan. Stir 3 tablespoons lemon juice into butter; serve over fish.
  • Broil: Preheat broiler. Coat baking pan and 1 lb Dover sole fillets with spray; season fish with salt. Broil 2–3 minutes and until fish separates easily. Combine 1/4 cup lemon Greek yogurt, 2 teaspoons honey, and 1 teaspoon Dijon mustard; drizzle over fish.
