Chimichurri Sauce

Chimichurri Sauce

1 shallot, finely chopped
1 small red chile pepper, finely chopped
4 cloves fresh garlic, finely chopped
1/2 bunch fresh cilantro, finely chopped
1/4 bunch fresh Italian parsley, finely chopped
2 tablespoons fresh oregano, finely chopped
1/2 cup GreenWise red wine vinegar
1 teaspoon kosher salt
3/4 cup GreenWise extra-virgin olive oil


  1. Chop shallot, chile pepper, garlic, cilantro (1/2 cup), parsley (1/4 cup), and oregano. Combine in medium bowl: shallots, chile peppers, garlic, vinegar, and salt; let stand 10 minutes for flavors to blend.
  2. Stir in cilantro, parsley, and oregano; whisk in oil. Cover and chill until ready to use.
