California Shrimp Sandwiches

3 cups frozen salad shrimp
large zip-top bag
1/4 cup mayonnaise
1/4 cup peach salsa
1 tablespoon dried parsley
1 tablespoon crumbled blue cheese
4 Bakery French Hamburger Rolls
1. Thaw shrimp by placing in large zip-top bag. Seal tightly and place under cold running water 5-10 minutes.
2. Combine remaining ingredients, except rolls, in medium bowl. Drain shrimp thoroughly and pat dry; stir into salsa mixture.
3. Slice rolls in half. Spoon shrimp mixture onto half of rolls; assemble and serve.
