Ingredients

1/4 cup fresh raspberries (plus more for garnish)
1 teaspoon lemon juice
1 teaspoon lime juice
1 oz simple syrup
1 1/2 oz rum
Splash of prosecco
Mint leaf, for garnish

Steps

  1. Muddle raspberries in cocktail shaker.
  2. Add ice, lemon juice, lime juice, simple syrup, and rum. Shake well; strain into an ice-filled Old Fashioned glass.
  3. Top with a splash of prosecco. Garnish with raspberries and a mint leaf.

Other Preparation Methods

Make it more formal.
Strain drink into a champagne flute and serve for a brunch or special occasion.

Make it a prosecco mojito.
No berries needed for this recipe. Muddle fresh mint in the bottom of a highball glass. Add rum, simple syrup, and lime juice; stir well. Top with prosecco, lime slices, and more mint leaves.
