Broiled Shrimp Tostadas

Broiled Shrimp Tostadas

Nonstick aluminum foil
1 Hass avocado, coarsely chopped
1/4 cup fresh cilantro, finely chopped
1 cup seedless cucumber, coarsely chopped
1/2 cup black bean and corn salsa
4 tablespoons avocado yogurt dressing, divided
12 oz medium shrimp, peeled and deveined
1 teaspoon ground cumin
4 baked tostada shells
2 cups mixed greens
1 lime, cut into wedges


  1. Preheat oven on broil. Line baking sheet with foil. Peel, pit, and chop avocado. Chop cilantro and cucumber. Combine avocado, cilantro, cucumber, salsa, and 2 tablespoons dressing until well blended.
  2. Place shrimp in medium bowl; toss with remaining 2 tablespoons dressing and cumin. Arrange shrimp in single layer on prepared baking sheet. Broil 3–4 minutes until shrimp are browned and 145°F.
  3. Place tostadas on serving platter. Top each tostada with salsa mixture, 1/2 cup greens, and 10–12 shrimp. Serve with lime wedge.
