Breakfast Pita Flatbreads

1 cup egg substitute
2 oz diced ham
3 tablespoons water
2 tablespoons presliced green onions
1/8 teaspoon kosher salt
1 cup frozen shredded hash brown potatoes
Cooking spray
1 Hass avocado
4 whole wheat pita flatbreads
1/2 cup shredded reduced-fat sharp cheddar cheese
1/2 cup fresh prediced tomatoes


  1. Combine in medium bowl: egg, ham, water, green onions, and salt; whisk until blended. Preheat large, nonstick sauté pan on medium-high 2–3 minutes.
  2. Coat potatoes with spray; add to pan. Cook 2–3 minutes, stirring occasionally, or until light browned. Reduce heat to medium-low, then add egg mixture to pan; cook 3–4 minutes, stirring occasionally, or until eggs are cooked and fluffy.
  3. Peel, pit, and slice avocado thinly. Heat flatbreads following package instructions, if desired. Spoon even amount egg mixture onto each flatbread; top with even amounts avocado, cheese, and tomatoes. Fold flatbreads over; serve.
