Blood Orange Relish Crostini

Blood Orange Relish Crostini

8 oz Bakery baguette, thinly sliced
2 medium blood (or navel) oranges
2 tablespoons red onions, finely chopped
2 tablespoons fresh Italian parsley, coarsely chopped
1/2 teaspoon fresh ginger, finely grated
1 tablespoon olive oil
2 teaspoons champagne (or white wine) vinegar
1/4 teaspoon kosher salt


  1. Preheat oven to 375°F. Slice baguette; arrange slices in single layer on baking sheet.
  2. Peel oranges; separate orange sections and chop coarsely. Chop onions and parsley; grate ginger. Bake bread 8–10 minutes or until toasted.
  3. Combine gently in a medium bowl: oranges, onions, parsley, ginger, oil, vinegar, and salt. Spread orange mixture evenly over baguette slices. Serve.
