Bibb Lettuce Salad with Grilled Peaches and Mozzarella

Bibb Lettuce Salad with Grilled Peaches and Mozzarella
Total Time:
35 minutes


2 medium ripe peaches, pitted and cut into wedges
1 tablespoon olive oil*
8 cups torn Bibb lettuce (about 3 heads or 5 1/2 ounces)
1 small cucumber, halved lengthwise and thinly sliced
6 ounces fresh mozzarella cheese, sliced into 1/4-inch-thick rounds
1/4 cup pumpkin seeds (pipits), toasted

Lemon-Honey Vinaigrette (below)


  1. Lightly brush peaches with olive oil. For a charcoal or gas grill, grill peaches on the greased rack of a covered grill directly over medium heat for 2 to 4 minutes or until tender and lightly browned. Set aside.
  2. Divide lettuce among 6 plates. Top with cucumber slices, peach wedges, cheese and pumpkin seeds. Drizzle with Lemon-Honey Vinaigrette before serving.

TIP: To keep peach wedges from falling between the grill grates, heat a lightly greased grill tray on the grill rack. Place the peach wedges on the grill tray and continue as directed. Or heat a lightly greased grill pan on a stovetop over medium heat. Place peach wedges on the grill pan and grill 2 to 4 minutes or until tender and lightly browned.

Lemon-Honey Vinaigrette
In a small bowl whisk together 1 tablespoon lemon zest, 1/4 cup lemon juice, 2 tablespoons honey*, 1 small shallot (thinly sliced), 1/2 teaspoon Dijon-style mustard, 1/4 teaspoon salt and 1/4 teaspoon black pepper. Drizzle in 1/4 cup olive oil*, whisking constantly, until well mixed.
