Berry Cheesecake Parfait

2 cups mixed berries (such as raspberries, blueberries, and blackberries)
1/4 cup + 2 tablespoons sugar
1 tablespoon water
8-oz) package cream cheese, softened
1 tablespoon vanilla extract
1 cup frozen nondairy whipped topping, thawed
1/2 cup graham cracker crumbs


  1. Combine berries, 2 tablespoons sugar, and water. Let stand 12-15 minutes or until sugar has dissolved.
  2. Beat in medium bowl with electric mixer: cream cheese, 1/4 cup sugar, and vanilla extract until smooth. Fold in whipped topping.
  3. Assemble in 4 tall parfait glasses in this order: cream cheese mixture, graham cracker crumbs, and berry mixture. Repeat layers.

Other Preparation Methods

No-bake: Combine 2 cups rolled oats, 3/4 cup almond granola, 1 cup chocolate chips, 3 tablespoons honey, and 3/4 cup peanut butter until thoroughly mixed. Press oat mixture into a 9-inch-square baking dish. Microwave 1/4 cup strawberry jam on HIGH 1 minute; combine with 2 cups berries. Top oat mixture with berry mixture and chill until set. Cut into bars and serve.
