Beyond the Basics: Wine and Cheese Pairing

There's a reason that wine and cheese are so often paired: They're natural flavor companions—the fat in cheese instantly balances the inherent tartness in wine, creating a balanced mouthfeel.

But which wine goes with which cheese? Selecting a perfect match can be tricky, especially when it comes to strongly flavored cheeses like blue cheese. Because of its sharp characteristics, blue cheese needs a light, refreshing wine for balance like riesling.

On the other end of the spectrum, a white cheddar has a different kind of hearty flavor—one that's best balanced by a fruity white like sauvignon blanc.
