Bring 2-1/2 cups water and 1/8 teaspoon salt to boiling in medium saucepan on medium-high heat. Add 1 cup pearled barley. Reduce heat to low; simmer 40-45 minutes, stirring occasionally, or until grains are tender but still chewy. Add cooked pearled barley to vegetable or bean soup. Makes about 3 cups cooked pearled barley.
