ABOUT ATLANTIC COD

Atlantic Cod, including our Publix frozen cod, has a sweet, mild flavor, firm texture, and large flake. This lean fish is best prepared using moist heat to prevent overcooking.

Ingredients
1 1/2 lb cod fillets
1/4 cup flour
1 egg, beaten
1 cup panko bread crumbs
1/4 cup canola oil
Salt and pepper to taste
Lemon, optional

Steps
  1. Preheat large sauté pan on medium. Dip fish in flour (coating both sides), then dip into egg mixture (allowing excess to drip off), and coat with panko.
  2. Place oil in pan, then add fish; cook 4-5 minutes on each side or until crust is golden and flesh is flaky. Drain on paper towel and season with salt and pepper. Serve with lemon, if desired.
