Whole fryer chickens are an economical way to serve chicken with a classic presentation.

Lemon Baked Chicken

1 whole fryer chicken (about 4 lb)
1/2 teaspoon kosher salt
1/4 teaspoon pepper
1 lemon

  1. Preheat oven to 350F. Season skin and body cavity of chicken with salt and pepper. Pierce lemon several times with a fork and place inside the chicken. Tie legs together to close cavity as tightly as possible. Place breast-side down in a baking dish; bake 20 minutes.
  2. Turn chicken breast-side up and bake 20 more minutes. Increase oven temperature to 400F and bake 30-35 more minutes or until golden and chicken is 165F.

Other Preparation Methods

Broil: Preheat oven to broil. Butterfly chicken, cutting along both sides of the backbone with kitchen shears to remove. Flatten chicken and season with 1/2 teaspoon each salt and pepper. Place on baking sheet breast-side up, cover loosely with foil, and broil 30 minutes. Remove foil and continue to broil 10-15 minutes or until chicken is 165F and skin is well browned.
