Beet Feta Salad
3 medium beets
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup green onions, chopped
1/2 cup feta cheese

Steam: Peel beet and cut in slices; add to 1/2 cup salted boiling water. Steam 5-6 minutes or until tender. Serve warm with butter.
Sauté: Grate equal portions of peeled beet and sweet potato. Preheat 1 tablespoon oil in sauté pan on medium 2-3 minutes. Add grated beet, sweet potato, and 1/4 cup finely chopped onion to pan. Cook 6-8 minutes or until slightly browned for a beet hash.
