Oregano Pork Skewers with Salad Cubana

  • Preheat grill and prepare salad; serve (20 minutes)

Oregano Pork Skewers with Salad Cubana

4 medium plum tomatoes, coarsely chopped
6 mini sweet peppers, thinly sliced
6 radishes, thinly sliced
1 small red onion, thinly sliced
2 tablespoons fresh oregano, coarsely chopped
2 cloves garlic, finely chopped
Zest/juice of 3 limes
4 tablespoons canola oil
2 tablespoons white balsamic glaze (or honey)
Large zip-top bag
1 pork tenderloin (about 1 lb)
8 (6-inch) wooden skewers
2 teaspoons complete seasoning
1/2 cup queso fresco cheese, crumbled
1/3 cup roasted pepitas (pumpkin seeds)

  • Chop tomatoes. Slice peppers, radishes, and onion. Place all in salad bowl.
  • Chop oregano and garlic; place in medium bowl. Zest/grate limes (1 teaspoon) and squeeze limes for juice (3 tablespoons); add both to oregano.
  1. Whisk oil and glaze into oregano mixture until blended. Place one-half of the marinade in zip-top bag (reserve remaining half of marinade).
  2. Cut pork into 1-inch cubes. Season pork with complete seasoning and place in bag with marinade (wash hands); let stand 10 minutes (or overnight), turning occasionally, to marinate.
  3. Toss tomato mixture with remaining half of marinade.
  4. Preheat grill (or grill pan). Thread pork cubes onto skewers and place on grill; grill 6-8 minutes, turning occasionally, or until pork is 145F. Remove pork from grill; let stand 5 minutes to rest.
  5. Crumble cheese over top of salad; sprinkle with pepitas. Serve.
